My kids were out of school a few days for Mardi Gras (welcome to Louisiana, y’all) and we decided it was time to get bakin’. We made these delicious M&M cookies and I knew I had to share them with you! I am going to be a little bold here and say that I’m a pretty good baker, so my kids are usually eating yummy homemade treats. But there was something about these little cookies that made them all so verbal about how much they loved them! My 8, 6, and 3 year old all took a bite and said, “Mmmm… these are SO good!” Maybe it was my new Pampered Chef stoneware cookie sheet that made all the difference? I have no idea. But they were incredibly good. Here’s the recipe if you want to give them a try:
1 cup packed brown sugar
1/2 cup white sugar
1 cup butter (2 sticks), softened to room temperature
1 1/2 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups M&M’s
Preheat oven to 350 degrees. Mix the sugar, eggs, butter, and vanilla in a large bowl until combined. Add the flour, salt, and baking soda. Blend well. Add 1 cup of M&M candies, reserving the rest for later. Using a cookie dough scoop or teaspoons, drop dough by teaspoonful onto ungreased cookie sheet. Use remaining M&M candies to decorate the top by lightly pushing a few candies on top of each dough ball. Bake at 350 degrees for 9 to 11 minutes, or until slightly golden. If making larger cookies (like a 2 teaspoon cookie dough scoop), increase your baking time by a couple minutes.
Tip: The key to excellent baked goods is typically to underbake them just slightly! Watch for the edges of these cookies to slightly “tan” and wait for the top to lose its shine. Then you know it’s time to pull them out! You can also let them sit on the pan for 5-10 minutes to continue baking the bottoms just slightly before moving them to a cooling rack.
