You guys! This morning was one of the craziest I’ve had as a mom. Like I mentioned before, my kids are all sick today. Yuck. And that means their normal routine of up by 6, eat breakfast, get ready for school went totally out the door. In fact, my youngest is 14 months and she slept in until 10:30 am. What?! That is crazy in our house. No one wanted to eat breakfast this morning until my 3 year old requested pancakes. I was excited because A) they are wanting to eat again- which means they are starting to feel better!! and B) I have recently fallen in love with pancakes all because of one little recipe. So it was the perfect excuse to make them again! Even if it was almost lunch time. Lol!
These pancakes are packed with protein since they are made with almost a cup of greek yogurt, and their texture is spot on!
