If you’re looking for something absolutely delicious to try this 4th of July weekend, look no further! This dessert is a showstopper. It’s so simple, fresh, and festive for the 4th. Serve it warm with some homemade vanilla ice cream and I can guarantee everyone will go home with a happy stomach.
Blueberry Apple Crisp
From Portland Airport Magazine
Preheat oven to 350 degrees. Then stir together:
2 c blueberries
3 apples – peeled, sliced, and cut into medium pieces
½ c sugar
¼ c cornstarch
½ t cinnamon
Pour fruit mixture into a pie pan or other medium-sized pan (please note that it will shrink slightly).
¾ c butter – softened
1 c flour
¾ c brown sugar
½ t cinnamon
¼ t salt
1 c oats
1 c chopped pecans (optional – we omit these and increase the oatmeal by another ½ cup because of my daughter’s tree nut allergy)
Once combined well, sprinkle over fruit filling and place in oven. Bake at 350 degrees for 30 minutes. Let cool in pan approximately 10 minutes before serving. We love to dish this up warm with homemade vanilla ice cream. Yum!
Tip: Consider using an apple peeler, corer, and slicer! I received one as a gift from my husband several years ago and have used it so much! The cost is only $10-20 on Amazon. It’s a major time saver and the kids have fun helping you in the process! Plus, who doesn’t like eating apples that are spiral cut?!
